Not sure how I could and should put a number on instruments for a mix. I suppose the limit would be when there is no more space in the templates for any additions to shine through. Then again there a lots of examples where I would have said that the last but one iteration is the complete one and bang someone has an idea to add something surprising.
What I do find is that it`s extremly helpful if HD tracks are available as - depending on style, mix AND instruments - I sometimes find it easier to record inbetween stages. Say there`s drums, guitars, keys and vocals, I usually take the drums and guitar templates, add my bass and then re-integrate the keys and vocals back into the mix.
But I think there`s no rule. If I feel that a track is "complete", I wouldn`t normally even have an idea on what to add. I suppose it lies in the difference between jamming and composing.
