I'm really not sure why you're just using a sax sound on your digital instrument. There's a myriad of other sounds... not that it matters. The phrasing of a sax and the legato style that most use would require a bit more listening to saxes to make it sound "sax like". Using any instrument's sound to "jam along" can be a good exercise, however if you want to sound convincing, then it needs to be in the style of the way that instrument plays. You've got some interesting ideas in your playing that may suit using a trumpet style or other brass instrument more than sax. Brass instruments have more of a single and separated note style that often plays intervals. The sax tends to run lines up and down the instrument. Doesn't have to, but that's most often what you'd hear.

Keep working with hearing the notes you want and ensuring those are the notes you play. "happy accidents" are OK occasionally, but don't work all the time. +1
