Full disclosure here, I used to be a vegetarian (and fish) chef. I do cook meat now, because I've got children and we need to live, but I find vegetables more interesting in terms of variety, aesthetics, complexity of flavour & texture, colour, smell and health benefits. Vegetarians will know that meat eaters see themselves as somehow more "macho" because they suck flesh, but I was brought up in the West of Scotland and you don't get much more macho than ...
